Caprese Eggs

Years ago my husband and I took an anniversary trip to Cancun and I had a caprese salad. It was amazing...tomato, fresh mozzarella, and basil....ever since that I have been trying to recreate this concoction in as many different ways as possible. My latest creation of this was in dinner earlier this week.

I love eggs. I specifically love scrambled eggs! They are protein packed, cheap, and quick to prepare. I eat them at least twice a day.

Now this recipe is not exact measurements it is pretty much to taste.

Start off by melting a tablespoon or two of butter or coconut oil over medium-high heat. Mince one to two cloves of garlic into the butter as it melts. Once the butter starts to sizzle add a handful of red onion, to taste, let fry for a minute or two. Throw in a small diced tomato, let fry for another minute or two. 

While those are frying whisk eggs in a bowl, I did 6 eggs. Pour into hot pan and turn the temp down to medium low. Sprinkle some mozzarella in and let melt while you stir the eggs. In between stirring mince some fresh basil. Once the eggs are close to being done sprinkle in the fresh basil and cook until done. 


Once you are ready to serve, put on plates and sprinkle with more mozzarella.

I served my eggs with some potato wedges and fresh pumpkin! It was all so delicious and filling!

The Floridian

While on vacation in St. Augustine, FL we went to an amazing restaurant called The Floridian.


This place is quite unique. Unless you know it is there you would probably pass it if you even happened upon the street it is on. It's off a street that has a church and a public parking lot. Most people would pass it up walking along to the main shopping street.


You walk in, after passing the limited patio seating, you can see straight into the kitchen! That was honestly my favorite part. I loved that you could watch them preparing food. Anyway, the hostess will greet you and seat you. The restaurant had a lot more seating than I would have expected! We went a bit early, around 5:30 on a weekday since we had small children with us, as a party of 8 (one of those 8 being in a high chair) we were able to be seated right away!

We ordered drinks first. I will say The Floridian is unique because they are situated so close to a church that they are not zoned to serve alcohol to you. You have to walk to a back bar area, order, receive your beverage (wine or beer), and take it back to your table. I think it is a major part of the charm!

The menu is quite comprehensive. They have something for everyone on there. They are a local place that uses locally sourced ingredients when possible. That makes me happy. They are vegan and gluten free friendly. Lots of options that way! Portions are gigantic! Definitely getting your money's worth! My teen and I split the 'N Waffles. We got the pulled BBQ Chicken and Waffles. It was topped with a sweet ricotta. Absolutely delicious! For dessert we had some sort of chocolate pecan pie with whipped topping. It was not your typical pecan pie though as I don't usually care for those. But, however this was made was divine! I really look forward to the next time I go visit!



Also, I was quite impressed with the wait staff as they were very accommodating when my brother and sister in law asked them to bring my niece and nephew's dinners early. They did so and did so quickly. We all had a small taste of what they had and it was amazing! Just some basic sounding chicken dish, but I totally would have eaten it!! It's very unusual to get really good, fresh children's meals these days.

All-in-all it was a great visit. I think it's great for foodies, families, kids, groups, or just a date night! If you are in the St. Augustine area it is definitely a must eat!!!

Recipe Round Up!

This is a round up sorts...

Last week in my weekly menu I tried a TON  of new recipes. Each of them were very good, so I wanted to highlight them, show you my finished product, and let you know of any changes I made.

Recipes I tried this past week:

Angela's Cold Brew Coffee Concentrate over at Oh She Glows:

I did the coffee concentrate exactly as described in the recipe, I made no changes. The coffee I used was Kati Kati from Starbucks. It is their summer blend (at least here in The Netherlands) and it is amazing! It has great citrus notes to it which you think would not be good, but oh my word is it ever the best! Cold brewing it like this takes away any acidity it may have, which is usually my biggest problem with Starbucks coffee's is the acidity. 

How I made my coffee: 
Lots of ice
1/4 cup-1/2 cup or so of coffee concentrate
1oz maple syrup
1/2-3/4 cup Oat milk
Dallop of coconut cream (I put mine in a pastry bag & dispense that way)

How teenager makes hers:
Lots of ice
1/4 cup-1/2 cup of coffee concentrate
1oz vanilla, hazelnut, or caramel syrup from starbuck (can use Monin or whatever your preferred brand but we don't have access to that here)
1/2-3/4 cup whole milk (Yes, we use whole milk *gasp*)
Spritz of real whipped cream

I didn't change a single thing about this recipe I followed it almost exactly. The only thing I cannot find here in Amsterdam is liquid egg whites in a separate bottle so I used two whole eggs and two egg whites.

Combine these two and you have the most amazing homemade breakfast treat you could ever imagine and they are healthy to boot!
People often think when you live a healthy lifestyle and eat food that is good for your body you never get any treats...well, there is balance and there are ways to make your favorite foods healthier so you can eat them more often. Coffee cake is something I haven't had in year so this was a fantastic treat without spending a ton on going out...because, as I've mentioned before, eating out can be very expensive in the Netherlands.

So, I pretty much didn't follow this recipe at all, except for the seasoning. I chopped the potatoes real small...I did regular and sweet potatoes. When the potatoes were done, I then cracked the eggs over the top & let them cook for a while until they were *almost* done and then I sprinkled with cheese & let it sit until it was melted and the eggs were totally set. It was really good and very filling.





This was quite delicious. The only problem I had was deciphering the cuts of meat at the grocery store since, well, they aren't in English and the butcher didn't really understand what I was asking and my phone wasn't charged so, ya know,just a good ol' case of a calamity of errors! But, even said they were delicious. I also couldn't find the bottled marinade she had so I used some teriyaki marinade and I crush garlic in to the teriyaki sauce. It was delicious and made a great glaze on the steak. 

For the potatoes, since I wasn't doing an appetizer like the author of the recipe,  I just made the regular twice baked potatoes my family enjoys which pretty much follows her recipe only I included bacon.



Sausage and Potatoes Au Gratin

I'm not including a picture because my pictures do not do it justice. Just visit the page and look at Christine's photos because her photo's are way more awesome than the ones I took...in fact, mine made it just look gross...probably because it is dark! lol

I found this recipe when Christine, over at Foody Schmoody posted on Facebook asking if we would like to see more of different types of recipes or something (it was a while ago) and I mentioned that my husband is totally a meat and potatoes kind of guy. She linked me to this recipe for the Sausage and Potatoes Au Gratin and suggested I give it a try. So, I pinned it...and like all things on pinterest it got lost in the shuffle and I forgot about it! Well, I was needing some inspiration and since smoked sausage is HUGE here in my area of Europe I figured why not give it a try!

Changes I made:
  • I left out the onions because my husband HATES them with a thriving passion lol I did throw in onion powder because he loves that...go figure :-/
  • I used organic unbleached flour
  • I used half unsweetened almond milk and half full fat cow's milk to cut the cals a bit ;)
  • I can't find bricks of cheddar or shredded cheddar in my local grocery (have to go to a specialty store for it) so I use gouda.

New Restaurant Friday: Wild Wing



This was where we decided to take our New Restaurant Friday this week. Originally on my meal plan for this week we were going to try somewhere else, but after much deliberation and Thursday night hubby mentioning wings no less than three times we changed our minds!

Boy were we glad we did! Wild Wing located on Granville St in Vancouver is a cute little joint located between Nelson and Smithe. When you walk in it is set up very much like a Hooters for those of you that have been to one; roomy booths, a bar, and lots of televisions.

We were seated right away, which surprised me since there was a hockey game...or maybe that is why we were seated right away. Our waitress was great, very attentive.

When you look at the menu you are offered wings three ways: traditional (breaded), naked, or boneless. We chose traditional.

This is what we had:

 Garlic Parm, Sweet brunette which is a combo of the two flavors we got, and Honey BBQ. I only tried one and it was the sweet brunette really tasty. Great combo of the two flavors.

This was my meal, coconut shrimp and caesar salad. The shrimp were as good as any from back home in Florida. Crispy, not greasy and the dip was fantastic, really complimented them. The salad was tossed in the garlic parm dressing, 'twas perfect!

Wild wing is great for groups and families. The booths were large, it wasn't quiet, and the food is for the fingers! Make sure you go check it out!

Menu plan Monday #33 + a weekend recap, of course!

Happy Monday! I hope those of you who suffering from nearly insufferable weather are faring ok! I know it is pretty darn cold out there for many of you so stay warm...here's a couple of fun jokes to get you through...



As for us we have had a shockingly mild winter! I can't even believe all the sun we have had. This time last year I was taking a Vitamin D supplement everyday, suffering from a hip issue caused by Vitamin D deficiency, and hadn't seen the snow since October 15th! Much different story this winter. I am a happy, happy gal!

That being said, since the weather was so nice we were able to get out a little this weekend since I was finally feeling better. We did two New Restaurant days (Friday & Saturday). The first was just to the new Five Guys they built. Of course we've been to Five Guys but it had been so long & all 3 of us really wanted a burger so off we went. I didn't take any pictures because we were all so hungry that I forgot! But, it was really good. It is on Robson St in Vancouver past Granville. Definitely recommend visiting if you want a good basic burger when you are here in Vancouver, those can be difficult to find.

Our second was impromptu...we didn't realize we would be going out, but were glad we did as the place we went was decent.

The inside was really nice. It is supposed to be like a classic English pub. They did serve traditional English dishes but we aren't too keen on those so we got some poutine which wasn't too salty so that is a first! Hubby loved it. Hubby had a jerk chicken burger. He said it was pretty bland, not much jerk flavour at all. I had the salmon...it too sadly was bland. But the broccoli & sweet potato fries were great! Lastly the drinks were phenomenal as they should be at a pub so all was right with the world in the end. We would definitely go back for drinks and appetizers, though!

Worked toward my goal of better nutrition by having my Shakeology while helping my daughter clean out & organize her room (thus working on another goal toward a tidier home)

Finally, did a little shopping & bought these super cute workout shirts...I love the pink one it says "anything can happen". Yes, yes it can so long as you work hard enough! 

But, enough about us...on to the menu for the week!

Now, in my house since I have recently taken the step to becoming a beach body coach all of us have decided to take the beach body challenge and see where we can get ourselves so our menu is going to be full of whole foods and lot of healthy goodness to fuel our bodies for P90X3!

Family Favorite's Friday!

So, I am starting a new series each Friday during the winter showcasing some of my family's favourite meals. These won't necessarily be healthy, but they are favorites that I try to make every now and again. The first is...

Hubby's Favourite Chicken Alfredo


I titled this “favourite” because it is one of my husband’s favourite meals I make. I don’t make it often because, well, it quite frankly is a heart attack on a plate lol But, if you are serving it I suggest to do it right. Use real fettuccine, real cheese, all that good stuff. Here’s the recipe:

Serves 4 (generously)

1 jar of Classico Alfredo sauce or Ragu Alfredo sauce
2-3 chicken breasts
½ a box of fettuccini
Various spices (I use nature’s seasons)
1T olive oil
Mozzarella and Parmesan cheeses (to taste)

Cube the chicken breasts. In a pan heat the oil over med-med hi heat and throw in the chicken breasts season all over with the nature’s or all-purpose seasoning of your choice. This is best when you let the chicken fry up so it’s kind of brown on one side. Flip it and let it cook until done. Turn the heat down to low and pour in the Alfredo sauce let it warm while the pasta finishes cooking.



While that is cooking bring a pot of water to a boil and cook the pasta according to package directions.
Then, add the pasta to the pot with chicken and sauce. Let simmer together. If it seems a little thick add a dash or two of milk to thin it out a bit. Add some seasoning and let simmer for 5 minutes or so.
Dish out and top with mozzarella and parmesan cheeses.

Yum!

Best served with a nice salad and some garlic cheese bread.

Like I said this is a real treat, not something you have every day but makes a nice Sunday dinner or birthday dinner in this case!

Menu Plan Monday #26: It's been a while!

Well Hello Blogland! It has been soooooooooo long since I have done a Menu Plan Monday Post! I am so glad to be back on the wagon!

So, this weekend we didn't do a whole heck of a lot, but here's a small collection:


The Happy Haunting sign can be found in my new Etsy Shop!!!! I am super excited, go over and "favourite" my shop so you can keep up with me as I get more and more inventory uploaded this week!  The top left picture is my gorgeous teenager modeling a cute peplum top grandma sent her for the fall. The bottom left was our Friday night pizza night. It was all homemade and so delicious! We also had drinks with friends at our favourite bar that consisted of a Tobelerone Martini (a chocolate martini) and an Irish Coffee. Very tasty way to end a Saturday! Sunday has consisted of some amazing cinnamon rolls and grocery shopping.

Food Prep:

Ultra Creamy Hemp Seed Dressing & Delicata Squash (both are very tasty), in the middle is an Almond Creame from the Karma Chow Cookbook for parfaits.

Paleo Spiced Nuts: 1 cup of walnuts and pecan, 1T honey (I'd reduce to 1/2 Tablespoon), and 1/2 teaspoon cinnamon, and 1/8 teaspoon nutmeg. Bake at 350 for 10 min, continue baking if they aren't brown enough for you.

Our salad for the week! I can't wait to put that delicata squash over this with some nuts and that hemp seed dressing. Yum!

I tried to include my hints and tips for making the most out of my cooking so I wasn't doing a ton of extra prep on Sunday, just doing as I went when I was actually cooking. 

For snacks and freezer items this is what I'm cooking up today...

Over on Pinterest I had seen where a woman had done this, but shredded zucchini into it and so that is what I am going to do today to have around for snacks, I'm thinking these with some tuna would be a fab afternoon snack! ;)
I will just make a few changes: I will use 2 flax "eggs" instead of eggs, and I'll be using a cup of butternut squash puree instead of pumpkin. :)

The last two years I've made these every year right around this time. I use enjoy life chocolate chips, I use coconut palm sugar instead of brown sugar, and I use organic, unbleached flour. These are so moist, I usually double the recipe and I use her tip for making break and bake freezable cookie dough. They are a major hit with the kiddo and her friends!

So, those are just a few of the things I will be whipping up for this next week and freezing to make meals easier later on down the line! ;)

Menu Plan Monday #22: Don't forget about lunch!

I thought I'd start Monday with a super hilarious (and probably slightly embarrassing) story about my teen. When she was in elementary school she never particularly enjoy school lunch. When we lived in Kansas not all the schools had a kitchen in house so the lunches were made in the morning at an annex (aka another school) and shipped over around 10am and kept safely warm. Well, depending on what they were serving that day the lunch could seriously stink by her gym time which was 10:45 (they ate at 11:30). Well, this particular day they were serving fish and broccoli. So, she goes to lunch and due to the menu the gym teacher holds gym [mercifully] outside. Well, I'm not sure what happened between 10:45 and 11:30, I'd assume it was a bit of a blood sugar drop, but the poor kid walks into the gym for lunch and just tosses her cookies all over the floor. The nurse asks her what happened and she said, "I don't know I walked in and smelled lunch and just couldn't hold it in!" Poor kid, after that she has seriously never eaten another school lunch. So...in honor of my daughter's first full week back and other parents who are dealing with a I don't dare serve my child the cafeteria food school I bring you a series of school lunch ideas....

Hard boiled egg, organic chocolate milk, cherries, and a whole wheat (the bread seriously has 4 ingredients and 1 gram of sugar. Read labels) grilled cheese (served cold). I know it sounds weird, but she loves it! Plus this is very high protein and keeps her full and going and able to think!

Cherries, organic chocolate milk (wrapped in a napkin lol), chicken salad (leftover chicken, cucumbers, and onion), banana slices and raw almonds (her snack), and homemade coconut oil brown sugar cookies. 

Ham and cheese with two local honey sticks, some frozen mixed veggies (they thaw out by lunch), and an organic milk. 

Leftover steak taco meat, organic chocolate milk, roasted fingerling potatoes, and half an ear of corn. For snack raisins, almonds, and cucumber slices.

Snack: Cherries, strawberries, and cucumber slices.
I should note she normally doesn't get chocolate milk it just so happened this was during a camp week so she was being very active and I wanted to make sure she got the extra protein from the milk (5+ hours of tumbling and cheerleading you need it! lol), for school lunch she takes a water bottle, nothing else. I try to make sure everything is high in protein and we use up what we have so nothing goes bad.

Thursday: Fried beef and cheese with rice, and corn/zucchini
Friday: New Restaurant Friday
Saturday: Surf & turf with corn and acorn squash (will travel over to Granville Island to get some crab and lobster)
Sunday: Burrito bowls/tacos with mixed salad
