Apple Cinnamon Peanut Butter Wrap!


I love anything with peanut butter and anything in a wrap...so does my kid. This is a great lunchbox main course because even if your kid is in a peanut free school you can easily make this with an allergy friendly alternative spread.

I usually do not make this in advance as my child apparently has a very sensitive palate and she does not like the lemon juice I put on the apples to keep them from browning coupled with the PB so I just make it the day of and the apples stay fine until lunch.

What ya need:
1 tortilla
1/2 an apple
chia seeds
sprinkle of raisins/craisins
cinnamon and/or nutmeg

How ya do it:
Spread a tablespoon or so of peanut butter on the tortilla so it is sufficiently covered.

Dice up half an apple so it is fairly small, place in the middle of the tortilla.


Sprinkle with a few raisins or craisins or a little of both.

Sprinkle lightly with chia seeds for some added protein, then add a little cinnamon and nutmeg for some spice!

I put this in her lunch box with some berries and tomatoes and cucumber slices.

The Floridian

While on vacation in St. Augustine, FL we went to an amazing restaurant called The Floridian.


This place is quite unique. Unless you know it is there you would probably pass it if you even happened upon the street it is on. It's off a street that has a church and a public parking lot. Most people would pass it up walking along to the main shopping street.


You walk in, after passing the limited patio seating, you can see straight into the kitchen! That was honestly my favorite part. I loved that you could watch them preparing food. Anyway, the hostess will greet you and seat you. The restaurant had a lot more seating than I would have expected! We went a bit early, around 5:30 on a weekday since we had small children with us, as a party of 8 (one of those 8 being in a high chair) we were able to be seated right away!

We ordered drinks first. I will say The Floridian is unique because they are situated so close to a church that they are not zoned to serve alcohol to you. You have to walk to a back bar area, order, receive your beverage (wine or beer), and take it back to your table. I think it is a major part of the charm!

The menu is quite comprehensive. They have something for everyone on there. They are a local place that uses locally sourced ingredients when possible. That makes me happy. They are vegan and gluten free friendly. Lots of options that way! Portions are gigantic! Definitely getting your money's worth! My teen and I split the 'N Waffles. We got the pulled BBQ Chicken and Waffles. It was topped with a sweet ricotta. Absolutely delicious! For dessert we had some sort of chocolate pecan pie with whipped topping. It was not your typical pecan pie though as I don't usually care for those. But, however this was made was divine! I really look forward to the next time I go visit!



Also, I was quite impressed with the wait staff as they were very accommodating when my brother and sister in law asked them to bring my niece and nephew's dinners early. They did so and did so quickly. We all had a small taste of what they had and it was amazing! Just some basic sounding chicken dish, but I totally would have eaten it!! It's very unusual to get really good, fresh children's meals these days.

All-in-all it was a great visit. I think it's great for foodies, families, kids, groups, or just a date night! If you are in the St. Augustine area it is definitely a must eat!!!

Menu plan Monday #33 + a weekend recap, of course!

Happy Monday! I hope those of you who suffering from nearly insufferable weather are faring ok! I know it is pretty darn cold out there for many of you so stay warm...here's a couple of fun jokes to get you through...



As for us we have had a shockingly mild winter! I can't even believe all the sun we have had. This time last year I was taking a Vitamin D supplement everyday, suffering from a hip issue caused by Vitamin D deficiency, and hadn't seen the snow since October 15th! Much different story this winter. I am a happy, happy gal!

That being said, since the weather was so nice we were able to get out a little this weekend since I was finally feeling better. We did two New Restaurant days (Friday & Saturday). The first was just to the new Five Guys they built. Of course we've been to Five Guys but it had been so long & all 3 of us really wanted a burger so off we went. I didn't take any pictures because we were all so hungry that I forgot! But, it was really good. It is on Robson St in Vancouver past Granville. Definitely recommend visiting if you want a good basic burger when you are here in Vancouver, those can be difficult to find.

Our second was impromptu...we didn't realize we would be going out, but were glad we did as the place we went was decent.

The inside was really nice. It is supposed to be like a classic English pub. They did serve traditional English dishes but we aren't too keen on those so we got some poutine which wasn't too salty so that is a first! Hubby loved it. Hubby had a jerk chicken burger. He said it was pretty bland, not much jerk flavour at all. I had the salmon...it too sadly was bland. But the broccoli & sweet potato fries were great! Lastly the drinks were phenomenal as they should be at a pub so all was right with the world in the end. We would definitely go back for drinks and appetizers, though!

Worked toward my goal of better nutrition by having my Shakeology while helping my daughter clean out & organize her room (thus working on another goal toward a tidier home)

Finally, did a little shopping & bought these super cute workout shirts...I love the pink one it says "anything can happen". Yes, yes it can so long as you work hard enough! 

But, enough about us...on to the menu for the week!

Now, in my house since I have recently taken the step to becoming a beach body coach all of us have decided to take the beach body challenge and see where we can get ourselves so our menu is going to be full of whole foods and lot of healthy goodness to fuel our bodies for P90X3!

Dinner: Homemade Hamburger Helper with zucchini & corn & whole wheat pasta!

Tuesday
Breakfast: Paleo Pancakes and egg whites

Breakfast: Paleo pancakes & egg whites
Lunch:  Sandwiches loaded with veggies; the husband will probably want a break & will eat out
Dinner: Crockpot beef tacos with salad & leftover rice (make it dirty rice to go in the tacos)

Thursday
Breakfast: Egg sandwiches with fruit salad and 
Lunch: Sandwiches and salad
Dinner: Lean pizza burgers with salad

Friday
Breakfast: Paleo Pancakes and egg whites
Lunch:  Tuna Salad/chicken breast & cucumbers for the husband
Dinner: Homemade calzones & salad

Saturday
Breakfast: Blueberry muffins, bacon, and fruit
Lunch: Snacks for cheer competition
Dinner:  Eat out....will be out of town at Cheer competition

Sunday
Breakfast: Blueberry muffins and fruit
Lunch: Big thick shakeology shakes
Dinner: Potatoes with bbq chicken legs and veggies

Snacks: Shakeology, nut thins & hummus or cheese, popcorn, peanuts & raisins

Menu Plan Monday #26: It's been a while!

Well Hello Blogland! It has been soooooooooo long since I have done a Menu Plan Monday Post! I am so glad to be back on the wagon!

So, this weekend we didn't do a whole heck of a lot, but here's a small collection:


The Happy Haunting sign can be found in my new Etsy Shop!!!! I am super excited, go over and "favourite" my shop so you can keep up with me as I get more and more inventory uploaded this week!  The top left picture is my gorgeous teenager modeling a cute peplum top grandma sent her for the fall. The bottom left was our Friday night pizza night. It was all homemade and so delicious! We also had drinks with friends at our favourite bar that consisted of a Tobelerone Martini (a chocolate martini) and an Irish Coffee. Very tasty way to end a Saturday! Sunday has consisted of some amazing cinnamon rolls and grocery shopping.

Food Prep:

Ultra Creamy Hemp Seed Dressing & Delicata Squash (both are very tasty), in the middle is an Almond Creame from the Karma Chow Cookbook for parfaits.

Paleo Spiced Nuts: 1 cup of walnuts and pecan, 1T honey (I'd reduce to 1/2 Tablespoon), and 1/2 teaspoon cinnamon, and 1/8 teaspoon nutmeg. Bake at 350 for 10 min, continue baking if they aren't brown enough for you.

Our salad for the week! I can't wait to put that delicata squash over this with some nuts and that hemp seed dressing. Yum!

I tried to include my hints and tips for making the most out of my cooking so I wasn't doing a ton of extra prep on Sunday, just doing as I went when I was actually cooking. 

For snacks and freezer items this is what I'm cooking up today...

Over on Pinterest I had seen where a woman had done this, but shredded zucchini into it and so that is what I am going to do today to have around for snacks, I'm thinking these with some tuna would be a fab afternoon snack! ;)
I will just make a few changes: I will use 2 flax "eggs" instead of eggs, and I'll be using a cup of butternut squash puree instead of pumpkin. :)

The last two years I've made these every year right around this time. I use enjoy life chocolate chips, I use coconut palm sugar instead of brown sugar, and I use organic, unbleached flour. These are so moist, I usually double the recipe and I use her tip for making break and bake freezable cookie dough. They are a major hit with the kiddo and her friends!

So, those are just a few of the things I will be whipping up for this next week and freezing to make meals easier later on down the line! ;)

Menu Plan Monday #22: Don't forget about lunch!

I thought I'd start Monday with a super hilarious (and probably slightly embarrassing) story about my teen. When she was in elementary school she never particularly enjoy school lunch. When we lived in Kansas not all the schools had a kitchen in house so the lunches were made in the morning at an annex (aka another school) and shipped over around 10am and kept safely warm. Well, depending on what they were serving that day the lunch could seriously stink by her gym time which was 10:45 (they ate at 11:30). Well, this particular day they were serving fish and broccoli. So, she goes to lunch and due to the menu the gym teacher holds gym [mercifully] outside. Well, I'm not sure what happened between 10:45 and 11:30, I'd assume it was a bit of a blood sugar drop, but the poor kid walks into the gym for lunch and just tosses her cookies all over the floor. The nurse asks her what happened and she said, "I don't know I walked in and smelled lunch and just couldn't hold it in!" Poor kid, after that she has seriously never eaten another school lunch. So...in honor of my daughter's first full week back and other parents who are dealing with a I don't dare serve my child the cafeteria food school I bring you a series of school lunch ideas....

Hard boiled egg, organic chocolate milk, cherries, and a whole wheat (the bread seriously has 4 ingredients and 1 gram of sugar. Read labels) grilled cheese (served cold). I know it sounds weird, but she loves it! Plus this is very high protein and keeps her full and going and able to think!

Cherries, organic chocolate milk (wrapped in a napkin lol), chicken salad (leftover chicken, cucumbers, and onion), banana slices and raw almonds (her snack), and homemade coconut oil brown sugar cookies. 

Ham and cheese with two local honey sticks, some frozen mixed veggies (they thaw out by lunch), and an organic milk. 

Leftover steak taco meat, organic chocolate milk, roasted fingerling potatoes, and half an ear of corn. For snack raisins, almonds, and cucumber slices.

Snack: Cherries, strawberries, and cucumber slices.
I should note she normally doesn't get chocolate milk it just so happened this was during a camp week so she was being very active and I wanted to make sure she got the extra protein from the milk (5+ hours of tumbling and cheerleading you need it! lol), for school lunch she takes a water bottle, nothing else. I try to make sure everything is high in protein and we use up what we have so nothing goes bad.

Menu Plan Monday #11

Wow! What a weekend! Did you read my Sunday weekend re-cap?? Normally I just give a brief recap of our weekend in today’s post, but this past weekend was spontaneously fun and I felt warranted a post of it’s own!

I did still manage squeeze in my Sunday prep for meals and after last week I was needing to get back on the wagon, I fell off for a few days there! This is my daughter’s last week of school so I have something very special planned for that day…check it out:

Breakfast
Monday:
Kiddo: Pancakes and strawberries drizzled with local honey.
Me: Raw buckwheat porridge (make this, seriously, so good.)
Sunday Prep: Soak groats as soon as you wake up, will be ready to blend by the afternoon. Whip up porridge and make a parfait out of it, store in fridge for eating throughout the week. I already had pancakes frozen, if you don’t whip up a batch of these in freeze them in 2’s. Pre chop strawberries and store them in snack size baggies or small glass containers.

Tuesday:
Kiddo: Carnation instant breakfast and a hard boiled egg
Me: Creamy oatmeal and two egg whites
Sunday Prep: hard boil 6 eggs and pre-mix carnation’s. Oatmeal will be made fresh.

Wednesday:
Kiddo: Cinnamon apple french toast muffin with local honey.
Me: Omelet burrito with mushrooms, a little cheese, and any leftover greens.
Sunday prep: Make French toast muffins (recipe to come), slice mushrooms and store in a glass container. Shred a brick of mozzarella and cheddar and store in large glass container for the week.

Thursday: Last day of school!
Kiddo: Candy buffet. There will be an insane array of m&m’s, caramilk, chocolate milk, and whatever else I can get at the candy store! She is inviting a friend over that morning so I shall send them off hopped up on refined sugar and let them spend the day annoying their teacher for the last time! :P
Me: I will check and see first if there are any leftovers I can use up to make a healthy breakfast. Otherwise I’ll do an egg white and avocado bowl with thin slices of onion and mushrooms.
Sunday prep: Slice veggies and store in glass container. Go buy candy.

Friday: Summer vacation begins! One week until Florida!!
Everyone: Pot of scrambled eggs with home fries

Saturday:
Use up any leftovers from the last week looks like we’ll still have some pancakes, French toast muffins, eggs, oatmeal, porridge. So we’ll see and make it tasty!

Sunday:
Everyone: Scrambled egg crescents with fruit.

Lunch
Monday:
Kiddo: Roast beef sandwich on some garlic barbari with kale, a few apple slices, and hard boiled egg.
Me: Leftovers from Friday’s dinner.
Mr: Homemade hamburger, apple, and popcorn.
Sunday prep: make sandwich, slice apples. Eggs were hardboiled during breakfast prep.

Tuesday:
Kiddo: eat out at Playland-field trip for her class
Me: Leftover’s from Sunday’s dinner.
Sunday prep: when packing away leftovers portion out into lunch sizes.

Wednesday:
Kiddo: Field trip with her class to the pool may pack her something light like a pb&j, a little cheese slice, some fruit and water.
Me: Peanut butter and raw jelly on homemade bread with a hardboiled egg white and a quarter of an avocado.
Mr: Sunday’s leftovers.
Sunday prep: make jelly, super power chia bread. Egg was hard boiled with breakfast prep.

Thursday:
Kiddo-will eat out the last lunch of the year with her friends
Me: Check and see what leftovers are hanging around and need some using up. Otherwise nice sandwich with sundried tomato pate on super power chia bread with an over easy egg served with some cabbage salad.

Friday: First day of summer!
(Almost) Everyone: will depend on weather but I hope to pack a picnic of sandwiches, fruit, and any easy to eat leftovers to go sit in the park and fly a kite, play some Frisbee, etc just enjoy the weather. Otherwise we’ll to an indoor picnic down by the pool to feel like summer. Oh the joys of the PACNW!
Mr: Any leftovers that need to be used up he’ll take with him in the form of something tasty.

Saturday:
Everyone: Mini pizza’s with salad

Sunday:
Everyone: Croque Madame Sandwiches with salad.

Dinner
Monday
Bacon and cheese chicken breasts with mashed potatoes
Note for me: I will just have a chicken breast sprinkled lightly with cheese and a serving of zucchini.
Sunday Prep: Season chicken breasts and store in air tight container. Pre-cook bacon and store in separate container.

Tuesday

Wednesday
Today is our anniversary and our dungeon’s and dragonscomedy night so we will just have dinner out. I will put together some sort of leftover lunchable for the kiddo since she will be at cheer and then with friends.

Thursday: Last day of school!
Confetti mac and cheese in the crockpot (recipe to come). I feel like doing something easy today and don’t want to fuss.

Friday
New restaurant Friday! The kiddo *may* join us on this one just depends on her plans with her friends. We found a little pizza place about 5 blocks from our house so I think we'll try that...hopefully they have many different types of pizza for us to choose from!

Saturday
Leftover smorgasbord-I am thinking leftover chicken and/or beef with raclette, a big bowl of seasoned popcorn, and fruits and veggies that need to be used up and any leftover lunch meat that needs to be used up OR breakfast for dinner-omelet's, bacon, leftover muffins, and maybe some hot chocolate and/or coffee!

Sunday
Lemon-garlic rotisserie chicken with sugar snap peas, corn and rice.

Meal Plan Monday #9

We're back around at Monday again...just three more weeks of school left for us! Can't wait for summer vacation to start and for us to start ticking fun stuff off of our summer bucket list!

But, I was super inspired this week to do my meal planning for a couple reasons:

  1. I completely reorganized my kitchen and have it just the way I want it. It is perfect for cooking!
  2. The ladies on my cooking message board were all meal planning and it made me excited that I am not alone in my meal planning obsession.
So...here goes...

Breakfast
I've actually stopped planning full out breakfasts & just have options available.

Egg white "muffins" some will be plain other with: ricotta, zucchini, tomato's, scallions, etc.




2 Carnation instant breakfast smoothie's (since she loves kale I'll slip in a few leaves of that to boost the vitamins)
Strawberry & brie grilled cheese (just minus the chocolate)

Saturday: Light breakfast at the farmer's market

Snacks
Strawberries with brie
Cinnamon apples
Kale & Carrots

Lunch
Monday: Leftovers: Rockin' Chicken Ratatioulle & a side salad
Tuesday: Veggie with hummus for dipping; Muffins with strawberries & kale
Wednesday: Stuffed brie strawberry chicken salad with walnuts; kiddo will have lunch at the farm
Thursday: Orange chicken salad with sunflower seeds & walnuts; kale chicken salad with walnuts
Friday: chicken salad served on cucumber & zucchini rounds; eat out
Saturday: Snack, will have a late lunch/early dinner with the kiddo since it's date night!

Monday: Hamburger helper with salad; lentil stuffed zucchini (for me)
Tuesday: Chicken & raclette quesadillas with corn & eggplant & zucchini
Wednesday: Breakfast for dinner (pancake burrito's & fruit salad)
Thursday: chicken fried rice/quinoa
Friday: Ribs with corn on the cob & whatever other veggies are leftover
Saturday: Take out from Urban Fare grill or Mongolian BBQ
Sunday: Is a surprise because it is father's day & I don't want the Mr. to know what I have up my sleeve ;)

Dessert
I don't normally make a dessert, but I have some rhubarb I've been dying to try.

So, that is going to be our week in food. I think I am most looking forward to trying the brie & strawberry grilled cheese! What meal that you planned are you most looking forward to trying???

Meal Plan Monday #8

Good Monday Morning, Friends!!!


This is a different sort of Monday for me! The little one is off on her Grade 7 class trip for the next 4 days so I don't have to get up early, make breakfast, snacks, or lunches for her for an entire week, basically!! I can't even believe this! But, there is still the husband & I at home so I need to plan for the two of us but it's a much easier meal plan for the week.

This month is also interesting because it is my goal to get more greens into my diet. I noticed I haven't been having too many greens so I want that to be a priority for me. My goal is one green smoothie a day & one salad a day.



I'm challenging myself to eat & drink one of these a day...who else is in????


Breakfast:
(I'm the only one eating breakfast at home in the mornings, hubby has a fruit bowl when he gets to work)

3 days this week Monday, Tuesday & Thursday) I will have a green smoothie for breakfast here is the recipe I will use:

24 oz coconut water
8 kale leaves
2 cups of spinach
2 granny smith apples
4 kiwi
Honey to taste

On Sunday blend all up in the blender & portion out into 3 mason jars. Put two in the fridge & one in the freezer. The freezer one will be taken out the night before I want to drink it.

Wednesday: (trying something different breakfast salad) 2 hard boiled egg whites, apple (tossed in coconut oil & cinnamon), raw walnuts, and a crumbled maple turkey patty (just season ground turkey with cinnamon, nutmeg & maple syrup or honey. Form into patties & fry in a pan with a little melted coconut oil delicious & easy.)

Friday: "Green eggs" (egg whites blended with spinach & scrambled up with maple turkey patties and any leftover fruit or green strawberry pops if there isn't any leftover fruit (these are just almond milk, strawberries & spinach, no sweetener frozen in pop molds pure goodness).

Saturday: Grab something yummy at the farmer's market.

Sunday: Cinnamon apple bowl (apple tossed in coconut oil & cinnamon with chopped banana and walnuts, can top with a little raw rolled oats and serve with milk or just heat up & eat. Can top with a little nut butter if desired)

Lunch: 

Me: On Sunday cut up the rest of the kale & red leaf lettuce. Place in 3 individual tupperware. Top each as desired. Here is how I will do mine:

Monday: Strawberries, cherries, and orange slices on top (any extra's will be put into a separate container for snacks) with raw walnuts and a little grated Gruyere.

  • Hubby: cheeseburger with corn 

Tuesday: Tuna, raisins, and a cut up apple and a few raw walnuts.

  • Hubby: spaghetti and cucumber slices

Wednesday: Lunch with hubby I will have black bean salad with rice on the side as we'll go to a little Mexican restaurant.

Thursday: Green monster oatmeal (blend almond milk, stevia, and spinach in blender place in pot, bring to boil at 1/3 cup coaches oats (or 1/2 cup rolled oats) and boil 5 minutes. Add any leftover fruit & a little local honey for allergies).

  • Hubby: Chicken with corn & cucumber

Friday: This is the kiddo's first full day back & she has the day off of school. It's supposed to be 21C that day so we are hoping to go hiking the Grouse Grind or go to the beach so I'll pack us an easy lunch. Some homemade trail mix bars, raw kale/spinach (yes, my 13 year old loves raw greens believe it or not), raw carrot sticks and broccoli (maybe some homemade hummus for me because my dirty little secret is I hate raw veggies, my daughter makes fun of me lol), some raw zucchini,  and maybe some of this bread if I get around to making it.

  • Hubby: he'll just eat out this day.

Saturday: Pork nachos (leftover pork from Thursday's dinner shredded over tortilla chips with melted cheese & corn on top. The kid & I will also have a side of black beans & lettuce.

Sunday: Green Smoothie's with nut butter & banana sandwiches (hubby will have a grilled cheese & milk)

Dinner
It's just hubby & I this week so I am going to try and make some just for two servings.

Monday: Taco/taco salad with cucumber & corn

Tuesday: Rockin' chicken ratatouille (from Hungry Girl 300 under 300). Hubby will have the same thing I'll just leave out all the veggies (so basically he'll just have a chicken breast cooked in a foil packet so it's super moist...lol I'll give him some corn or peas on the side)

Wednesday: Penne alfredo chicken bake with side salad (this is a bit heavy for us for a weekday but it's a favorite of the Mr's & I have ricotta I need to use up!)

Thursday: Crockpot bbq pulled pork with homemade rolls and roasted zucchini and corn. (I asked the kiddo what her favorite thing I cooked was & she said pulled pork so I'm making it for dinner the night she comes home. Plus, they will be in well after 6 so I wanted to make sure it would be ready to go!)

Friday: Pizza balls & whatever leftover veggies there are (if we get to hike or go to the beach we'll be exhausted & this is easy just a tube of premade pizza dough or crescent rolls with your fave pizza toppings in them rolled into a ball. Brush with butter or olive oil & sprinkle Parmesan cheese on top. Bake for 8-10 minutes or until golden. Serve with red or white (or mix them together & make a pink sauce).

Saturday: Seasoned beef & seafood (prawns & halibut), with zucchini and squash, with cheese fries.

Sunday: Crockpot Rotisserie Chicken with kale & corn on the cob.
