Menu Plan Monday-21 Day Fix Round 2

Happy Monday y'all! These last few weeks have been hectic but, I am back with my menu plan for my second round of the 21 day fix! 


Workout Schedule
Monday: Plyo Fix Extreme
Tuesday: Upper and Lower Fix Extreme (this round combining these so I can have one full day off for recovery)
Wednesday: Pilates Fix Extreme
Thursday: Dirty 30 Extreme
Friday: Yoga Fix Extreme

Goals
Not too much this week:
Focus and stay on track with 21 day fix
Clean out the foyer closet & my laundry room
I am also looking to get two Christmas projects started today


Menu
Breakfasts
M-W: Protein bowl with banana and coconut (1 red, 1 purple)
T-H-F: Eggs with spinach, peppers, and onion with pumpkin and sweet potato (1 red, 2 green, 1 yellow)
Sat: Protein Crepes (1 red, 1 purple)
Sun: Breakfast pizza (1 yellow, 1 purple)

Lunches:
These vary from day to day and mostly consist of leftovers as that is just easiest.

Dinners:
Monday: Lettuce Wraps with sweet potatoes (green, red, and yellow)
Tuesday: Beef and Butternut stew with a side salad (red, 2 green)
Wednesday: Taco lettuce wraps with brown rice (red, green, yellow)
Thursday: Leftovers
Friday: Chicken burgers in lettuce wrap with whipped butternut (red, 2 green)
Saturday: Twice baked sweet potatoes, side salad (1 red, 1 yellow, 1 green)
Sunday: Leftovers

Snacks:
Like lunches, snacks will fill in the gaps of containers I am missing. Will usually be apples with peanut butter, grapes and cottage cheese, peppers, pumpkin, etc.

I am really looking forward to this second round of 21 day fix. First one was super easy and I felt amazing after. Look for my results post later today to see my full opinion! :)

Packing Tips

When traveling a lot, packing can become a bit of second nature. So, I decided to share a few tips I've come across when talking to friends and acquaintences. 



Wear the thickest/heaviest items. If you have to bring a heavy coat, wear it. If you have to bring big bulky shoes, like boots, wear them. If you are bringing a pair of jeans but shorts for other days, wear the jeans. This saves valuable space and will allow you to fit more into a small space.

Multi-week trips choose lodging with laundry facilities. Many Air BnB rentals have laundry facilities, almost all hostels I've looked at have laundry facilities, and you can always utilize the sink and some soap if need be. But, this will help you to pack light for longer trips.

Know your destination and check the weather 24 hours before you leave. It is very important to be prepared with this information so you know if you should have a poncho with you, bring rain boots and an umbrella, or ensure you have shorts if you need it.

Be aware of local customs. This is important, when we went to Rome it was hot (85+F degree days) but to go into the churches there your knees must be covered as well as your shoulders...had we not looked in to this before hand we would have been very upset. In the middle east there are actual laws for how men and women (yes, even visitors) are supposed to dress, so just make yourself familiar with local customs and are prepared for the weather.

Grilled Peanut Butter and Banana Sandwich


Whew! Fell a little bit behind, but I am back! Today, I bring you some super fun to make extra use of that George Foreman grill you have lying around. I know you have one...we had one since the day we got married in 1999 and still have one living in Holland, so I know you have one. But, did you know you can use it for more than just grilling meat?! I came up with this idea when I saw a "panini" maker advertised in a catalog on Christmas...I was living in a small apartment and really wanted one, but was so tired of buying new gadgets! So, I thought to myself, hey, these look an awful lot a like, so I gave it a go and it worked famously...we now call the grill the panini maker half the time. This is one of our favorite things to make in the grill.

This amazingly delicious grilled peanut butter and banana panini. It is a delicious treat, in all its peanut buttery, honey, glory. 

Here is what you will need for one sandwich...

  • 2 pieces of cinnamon raisin bread
  • 1 tsp honey
  • 2 tablespoons peanut butter
  • 1/2 banana
Here's what you do...
  1. Spread some peanut butter on one piece of your cinnamon raisin bread (you can put some on both pieces if you are a peanut butter nut like me hehe, but be careful it is high in calories as good as it is for you ;))
  2. Slice up half that banana and put it on top of the peanut butter.
  3. Drizzle a bit of honey on top.
  4. Top with second slice of bread.
  5. Put in the George Foreman grill and put the lid down. I let mine toast for about 10 minutes, but keep an eye out as yours may be at a hotter temperature than mine. 

This is probably the teeanger's new favorite thing for breakfast...what is your favorite thing to make for breakfast?
