Menu Plan Monday +Workouts: Moving Edition

Wow, wow, wow! Easter Monday here folks.
We had a wonderful weekend full of games with friends, dinners with friends, and egg hunts! There was a poor decision of a donut and one of those Lindt Cream eggs for breakfast on Easter Morning but it was totally worth it ;)


As you know from my last post that we are undergoing a huge move to Amsterdam, Netherlands. This means very busy days of selling and tossing stuff. So, the menu is full of easy, quick stuff that doesn't require any more than a pan, a pot, and/or a baking sheet.

Breakfast Choices:
Oatmeal cups, cereal cups, eggs & veggies, shakeology, paleo pancakes with pb, 

Lunch:
Monday: Leftover's from Easter Dinner Out
Tuesday: me: eatout, teenager: spaghetti leftovers & salad 
Wednesday: me: tuna salad, teenager: lunch out with her friends
Thursday: Driving to Washington to take care of US needs, eat out
Friday: munchies plate: any fruit and veggies that need to use up, cheese, nuts OR Chicken Salad
Saturday: Grilled cheese with salad
Sunday: Omelettes or Cream of Wheat

Dinner:
Monday: Baked potatoes/baked sweet potatoes with zucchini and sugar snap peas
Tuesday: Tacos with salad
Wednesday: Chicken breasts topped with cheese & veggies/salad
Thursday: Spending the day in Washington taking care of US stuff, eat out
Friday: Hamburgers with veggies & potato skins
Saturday: Homemade Hamburger Helper with salad
Sunday:  BBQ pulled pork sandwiches with cheese, corn, and zucchini

Snack Choices: Shakeology bites, apples with peanut butter, paleo pancakes with pb

**Update** Paleo Pancakes
This recipe is adapted from the Big Ass Pancake...

2 tablespoon coconut flour
2 eggs
2 tablespoons milk (I use almond but you could use full fat coconut, coconut almond, or-gasp, even regular milk haha although then it is not quite so paleo anymore, I think that is "primal" then)

Put the coconut flour in a mug & break up any big lumps, add milk & eggs. Mix together with a fork until not lumpy. Cook in a small skillet, mine is about a 6-8" skillet and it takes up the whole bottom of the skillet. I top it with sunbutter, peanut butter, or almond butter. Many times I will mix my nut or seed butter with some coconut oil to make it a little runnier & more like a "syrup"-ish thing.

Workout Schedule
Not only are we moving, but I am having a crazy week with starting a new work project that will need a good amount of my attention. This means workouts will need to be quick, yet effective. 

Monday: 100 Burpee Burnout +insanity cardio abs
Tuesday: 1 mile run and X3 Yoga
Wednesday: Insanity Cardio Power & Resistance
Thursday: Doing some traveling and stuff so will try and do some foam rolling
Friday: P90X Cardio X
Saturday: 3 mile run, foam rolling
Sunday: Yoga at Lulu Lemon

Menu plan Monday +workout planning

So, ladies & gents...I just finished P90X3!!! I have more coming on that soon, but I did finish it just this past weekend. Overall I am happy with my results as I feel a lot stronger and tighter, but I will be honest I didn't really watch what I ate, so my results aren't 100% what I wanted...yet!

So, this menu plan focuses on clean, healthy eating for myself and my family of course. I am really changing how we are eating simply because the way we've been eating just doesn't work for us. None of us feel amazing so I am going back to my trusty clean recipes that work. Sorry pinterest, but those greasy awesome casseroles I've been making just aren't working...

Breakfast:
M-W-F: Big ass pancake with sunbutter and half a banana 
Tu-Th: 2 egg omelette with mushrooms, onion, spinach, avocado, and cheese and a slice of ezekiel bread with coconut oil & some gingerbread spice
Sat & Sun paleo donut holes with fruit

Lunch:
Monday: Leftovers
Tu & Th: Salad (chicken or tuna) with hard boiled eggs and avocado
Wed & Fri: Quinoa salad (throw in some black beans, onion, spinach, tomato)
Sat & Sun: Leftovers, omelettes & toast, or subs and salad-this will really depend on what we have time for we may just grab lunch at a food truck or something as we will be at a cheer leading competition 

Dinner:
Monday: Coconut crusted chicken strips,  zucchini fries, corn for the hubby
Tuesday: Tacos (we will do veggie & traditional)
Wednesday: Burgers with mushrooms, onions, and sugar snap peas
Thursday: Caramelized chicken/chick pea patties, with zucchini & mushrooms and french fries for the hubby
Friday: Homemade pizza (will do traditional and a zucchini crust) with salad
***this weekend will be super busy so these two meals are play it by ear, we may eat a late lunch so these may be moved to next week****
Saturday: Stuffed chicken breasts/chickpea patties with sugar snap peas and corn
Sunday: Homemade hamburger helper (this I make two of, one a regular and one with black beans and no meat) with salad  

Workouts
Now, since I am done with X3 I am in maintenance mode for a while. I originally planned to run the Seattle Rock & Roll Half on June 21st as mentioned back in January, but we've had something come up that is interfering with that, so, I am coming up with my own schedule. I know over the last year or so I haven't done much to lengthen my muscles so that is what I am focusing on. So there will be a lot of stretching and a lot of running.

Monday: Massage therapy day, X-Stretch from the original P90X set
Tuesday: 1 Mile Run, 1 Mile walk, Insanity Cardio Abs +foam rolling
Wednesday: Core Cardio and Balance
Thursday: 2 mile run + X3 yoga +Foam Rolling 
Friday: Insanity Cardio Recovery
Sunday: P90X Stretch

I included a lot of stretching this week since I had my massage therapy appointment the girl told me it will be most beneficial if my workouts this week included lots of stretching, so that is what I am doing!

What I Ate Wednesday + my week in workouts!




This past week I have been trying to make sure I eat a lot healthier than I had been. I am in my final block of P90X3 so I want to make sure I am really getting the most out of it!

This was our Saturday night dinner: chicken fried steak with a yummy cream gravy, caramelized onions and mushrooms, and broccoli! I sprinkled a little corn over mine because the Mr. had that and I couldn't resist.

Monday, since it was so gorgeous here in downtown the kiddo & I went for coffee after school, she obviously talked me into a chocolate chip muffin. We were going to sit out side but it was a bit too windy for that. I love the reflection in the table.

This was Tuesday's lunch and afternoon snack. On the left is strawberries, blueberries, and banana with coconut yogurt & a hard boiled egg. On the right is a big hunk of peanut butter-because ya know, sometimes life just calls for a scoop of PB-and a hard boiled egg.

Tuesday's coffee...I was feeling fabulous so I went for the Vegas mug ;) 

This was dinner one day last week a big salad with my delicious apple cider vinegar dressing and PaleOMG's Almost 5 Ingredient pizza pie.

Weekly P90X3 Review:

Wednesday: Eccentric Lower

Thursday: X3 Yoga...after eccentric lower I needed it!!! I was s-o-r-e!
Friday: Triometrics-This one is so funky because you do one exercise for 1 minute, but every 20 seconds he makes it a little harder...so you wind up doing one exercise 3 different ways! o_O It is exhausting, but oh-so-good!

Saturday: Eccentric Upper. This was the first time I remember doing this one. It was ok, not my favorite.

Sunday: Active "rest". I felt so poorly about Saturday's workout, even though I was sore, I didn't get the sweat I wanted so I did dynamix. If you want a sweat session without anything overly intense this is the workout for you!

Monday: MMX...after dynamix yesterday I woke up super sore. So, I was glad it was MMX but I must be getting it way better shape because I am working harder and harder during this workout every week and this one is a serious sweat session with serious hard work!

Tuesday: Decelerator. This workout is funny. I feel indifferent about it...I don't necessarily like it, but I don't despise it either. This one has what I call the "impossible exercise": crane push ups...if anyone out there can do these please check my about page & email me a picture I would love to brag on you!

Today: Pilates. Was supposed to be Triometrics, but I feel like I need the stretch from pilates, so that is what I am going with, trio tomorrow.

My X3 ends in a few weeks and my original goal from the new year was to start half marathon training. However, due to some things that have come up I won't be able to attend the half I was planning on, so that is out....trying to figure out what to plan for those 12 weeks...any suggestions?

What I Ate Wednesday +week in review of workouts!




I have a confession. I love food. All kinds of food, but good quality food especially. Loading up on good healthy food excites me, especially with the workouts I do it is essential. 

Last week I mostly fueled myself with garbage mostly. But, this week I have redeemed myself. 

Homemade fruit, yogurt & granola parfaits made all fancy like in wine glasses.
Broccoli & egg hash.
Wednesday Treat: Vanilla Latte & chocolate covered graham crackers
Roast with mushrooms & onions, broccoli, and sweet potato fries.

I am on a major broccoli kick lately...must be lacking iron or something...

This was my favorite meal of the week! It is 21 day sugar detox friendly. Look at the stems on that broccoli! Yum, yum!

Salad bar I chopped up for the week! This has been amazing in me getting in at least one salad a day!

P90X3 Update....

Now, on to the workouts! Last week was transition week in my P90X3 journey. This is the 2nd transition week, the one before the final block.

Wednesday: Accelerator

Thursday: Pilates X

Friday: CVX

Saturday: X3 Yoga

Sunday: Nap
I was really tired after this transition week. My whole body felt the work. I am definitely seeing a major difference in my abs...60 day pics to come next Wednesday.
Monday: Decelerator
Tuesday: MMX
I really struggled through this one yesterday. I was sweating bullets. Normally MMX is an easy one for me but I must have been giving it my all because I was sweating a lot and I can really feel it in my obliques.

Today: Eccentric lower
I woke up super sore today. My glutes, arms, and back are really feeling this week! Can't believe I am in the final block of this!

What I Ate Wednesday +weekly workout update!

Happy Wednesday y'all! I can't believe we are at the end of January already...this year is going to fly by, I just know it!

We have a very busy month coming up in February so get ready for some awesome food posts as at one point we are going out of the country and at another point we are spending some time in Seattle!

This week though was fairly busy and honestly I forgot to take pictures of my food. :-/ I have been running a couple of fitness challenge groups and trying to guide people to better health and nutrition so while I am eating well, it's sort of on the back burner for me to take pictures. But, I do have a couple of things to show y'all...




This is bone broth! Basically, for my cauliflower soup in my meal plan for this week I needed some broth. In the 21 Day Sugar Detox book they tell you how to make bone broth. It's super easy. First, I roasted a chicken so I would have some leftover for making lunches & some dinners this week. Next, I took the carcass & put it in the crockpot with 2 quarts of water (8 cups) and half a bulb of garlic. I let it cook for 8 hours on high & then just before I went to bed I reset it for 10 hours and then turned it off when I got up, it smells so delicious and tastes even better! It made 5 nice size jars of broth!

This is the cauliflower I bought for the week I am going to make with these:
Cauli-rice
&
Mashed Cauliflower.
The cuali-rice I will serve one meal with just coconut oil and salt & pepper like regular rice and the other one I will make like a fried rice with coconut aminos, peas, carrots, and a little egg scrambled in. For the mashed cauliflower I will be using this recipe. Yummy!

This was my snack yesterday...double chocolate shakeoloyg (4 oz unsweetened chocolate almond milk, 6-8 oz water mixed with a scoop of chocolate shakeology). It is so, so, so yummy! Love it!

Sunday: Rest...was so sore from snowboarding I could hardly move lol

This week since Monday has been my transition week into block 2 of P90X3. It has been absolutely fantastic! I am really loving it and really feeling the deep down effects! Here are some pictures...

From dynamix. The big picture is my post workout...I totally rocked it! The rest are just clips taken throughout. It's a super fun one! You work up a great sweat!

This is from Isometrix. This is the first time I'd ever done this one. It was basically all plank work & balance work. I can't wait to do it again!

Menu Plan Monday #34 +a tiny weekend recap

Wow, what a weekend this was! It wasn't necessarily too busy but there certainly was just a lot to get done.

Friday was a nice relaxing evening. Went out for a little shopping with the husband in the rain, then on the walk home picked up some chicken and potatoes at our local market. It was yummy and enjoyable. He also got his workout in! So proud of him for that!

Saturday my daughter had a cheerleading competition. It was held in a city called Chiliwack. It's about 90 minutes to the interior of BC. The weather there was horrendous. It was hard to keep the car in a lane because of the wind and it was so dark and rainy it was hard to see the lines on the road. But, due to my Mr's amazing skillz at driving we managed to make it there and back in one piece. Here are some pictures:

While we were there, since it was an all day event and we had been really good about eating only real, whole foods this week I packed us a nice bag of goodies:

Peanuts, raisins, bacon, water, snap pea crisps, pecans, plus some personal development books and a camera.

Sunday was so lazy. Spend exercising and relaxing with my hubby. I really, really enjoy those days. We cooked up some chicken legs and potatoes...mmm, mmm, mmm.


This week we have really kicked our nutrition into high gear by starting the 21 Day Sugar Detox. All my meals this week are free of sugar (except for a few exceptions I have to make for hubby's finicky palate, but I won't be eating those, just him). I will also continue drinking my Shakeology during this time but it is my only exception.

Breakfast ideas: Egg muffins with avocado, root veggie hash & eggs, sausage & veggies, leftovers, and apple cinnamon donuts from the book

Lunch ideas: Shakeology, tuna salad (I don't like canned salmon so opting for the tuna), chicken salad, leftovers, and sunday will be chicken breasts with veggies

 Monday: Mexican Burgers, creamy herb mashed cauliflower, rice/black beans
Tuesday: Salmon with caper tapenade,  pork chops for the hubby, and salad
Wednesday: (will adapt to crockpot) mustard glazed chicken thighs, golden beets and peas
Thursday: Breakfast for dinner: paleo pancakes with nut butter, and omelettes filled with full fat cheese, bacon, spinach, and other veggies
Friday: New Restaurant Friday: Rain City Grill  (bonus they are starting their Dine Out Vancouver special EARLY! WOOHOO!)
Saturday: Shepard's pie and salad; for hubby: burger from ground meat in the pie, and cucumbers and corn
Sunday: Braised beef short ribs, cauli rice, and any leftover veggies to use them up and start the week fresh!

An Honest Account: Focus T25 Beta

Rip'T Circuit

So, this is my second round of T25. The first round I must admit I was not impressed with...at all, sadly! In fact I was ready to sell my DVD's. However,  a woman I greatly admire became a beachbody coach and was putting together a T25 group that she didn't require drink Shakeology which was awesome so I decided to join her. I also made a pact with myself to work as hard as possible during every single 25 minute workout. After all, you only get out of a workout what you put into it.

Here are my before T25 Alpha and after T25 Alpha...


It doesn't seem like there is a huge difference but there is definitely some thinning in my abdominal area & my legs are losing fat & gaining a ton of muscle. I will admit too this is with minimal diet changes too. I still have some sort of chocolate after lunch (usually a homemade paleo PB cup or some paleo hot chocolate lol) and often times a small dessert in the evening. Friday's during our new restaurant visits I get pretty much whatever I want...but I am naturally a veggie lover anyway so that helps ;)

Anyway, moving on to beta!

This is my second week in beta. First week was killer...incorporating weights/resistance into the programme really gives the workouts some dimension. Now I go a bit heavier than I normally would simply because you aren't using the weights for terribly long so I felt like I could up the weights a little.

Rip'T Circuit I feel is closely related to Total Body from Alpha Round. It gets the whole body but when you work on an area I feel like it works it a little deeper than the total body. Plus, it has less push-ups than total body! HA! Rip't has definitive arm, leg, ab movements. I also feel like the moves in this one are all new. During alpha round I could totally tell when something was just a variation from Hip Hop Abs, Rockin' Body, Insanity, etc. But, this time around things just seemed new & fresh for this workout..plus, it is only 25 minutes! ;)

So, that is my assessment of rip't. It's a great DVD and is slowly but surely becoming one of my favorites! What is your favorite workout?

Menu Plan #25

Hello! Welcome to another Menu Plan Monday Tuesday...oops what happened there?! We had a heck of a weekend. It was dreary, cold, and rainy. So you may ask why didn't I get my menu up on Monday morning like usual....well, aside from the dozen (yes, literally a dozen) projects I completed the teen had a 4 day weekend and hubby took Monday off as he was very, very sick. We all know how our men get when they are sick, yes??? Well, he is no exception...so I spent most of my days taking care of him and working on project. Good news is I will have a lot to post about!

So, on to my meal plan and some prep tips:


I made the egg muffins a head of time. They are super easy. Grease a muffin pan, crack an egg in there, chop up some fillings (I used purple and orange pepper and zucchini and a little cheese), whisk them up with a fork and bake at 350 for about 15-20 min (not 100% on this so just watch your muffys). Once done let them cool for 5 minutes and store in packs of 2 for an easy grab and go meal...you can also heat them up for about 40 seconds and they are good as new. :)

 With these she usually takes a whole wheat pumpkin muffin and/or an apple.

I also made some overnight oats:
In here is a cup of almond milk (homemade), 3/4 cup of oats, 1T chia seeds, and a scoop of sun warrior protein powder, and 1tsp of pumpkin pie spice. I used up containers that had just a wee spot of nut/seed butter left in them. Very tasty!


These are banana bread protein bars...yet they have no protein powder! The buckwheat groats are the secret ingredient I suspect. They are very, very delicious ;) As an added bonus they are high in iron since the coconut nectar is a great source of iron! 

This is the last of my prep: you can see my egg muffins that were made, to the left are bags of peppers for the teenager's snacks...she loves those lol, a container full of rice, and some chopped zucchini, peppers, and onion. These will make it super speedy to throw in lunches and to whip up dinner!

Finally....

These aren't necessarily on my menu but I made a huge batch of chickpeas to freeze for use later, and I am also making a large batch of black beans to freeze and use later. These are great for making snacks, burgers, etc!

September Blogging Challenge: Favourite Outdoor Activity


Hello! Happy Sunday! Lots of posts have gone up lately, make sure you go over to the homepage and check them out if you are joining me from a direct link!

Today's prompt is my favourite outdoor activity. This is a tough one because I love a lot of outdoor things: swimming, going to the beach, walking, running, hiking, going to the park and playing with my kiddo, and al fresco dining. My favourite, if I have to pick just one would be going to the beach. I will tell you why, it's because going to the beach can incorporate several, if not all of the other outdoor activities I love! 
  • Usually I have to walk to get to the beach
  • Sometimes, depending on the beach it could be a hike to get there (lol)
  • I usually take a picnic lunch with me because I rarely stay for just a short amount of time
  • I can swim in the water (well, I don't really here in Canada lol)
  • When I go with a friend or my family we can toss the frisbee, fly a kite, or build a sand castle
  • Take a walk and collect shells
So, there you have it, my favourite outdoor activity that includes all of my other favourite outdoor activities!

How many times can you use the phrase "favourite outdoor activity" in one sentence?! Seriously, what is your fave activity for the outdoors, anything new and fun I should get into?

What I Ate Wednesday/WOD's #16

Well, well, well back around to....



Hard to believe it is that time again from last week...here's a peek:

Mmmmm....Via Pumpkin Flavour! So yummy and easy to make! Basically a hair under a cup of milk mixed with the packet! I use almond milk so it's a nice 100 calorie snack!

Halloween came early in my latte at breakfast Saturday morning.

Went to Dunn's Smoked Meats for our New Restaurant Friday. Got a grilled cheese, I took off most of the meat lol 

Breakfast Tuesday morning. Two hard boiled eggs, crackers with jelly, berries, and milk

I have been forgetting to take pictures of my food this week. I have been keeping on track and keeping it pretty healthy. Will be doing more cooking in the coming week so will have a lot more to post ;)

 Just finished up week one of the Focus T25 Beta Cycle!

This is what my week looked like:

Wednesday: Core cardio, awesome. Probably my favourite video.

Thursday: Speed 2.0
I believe this is from Speed 2.0. In this video there are different rounds that have two levels. Then at the end your work your way continuously through all the exercises. I am going to do a full on write up of it like I did for Alpha.

Friday: Rip't circuit. Finally got some weights in, thought my arms would fall off! ;) 

Saturday: Rest day, was tired and didn't want to do anything! I did manage to stretch though! :D

Sunday: Dynamic core. Standing core and horizontal core...tough stuff.

Monday: Doubles; upper focus and core cardio.

Made for a great workout! Loved these two together!

Tuesday: Rest day. Did some walking.

Coming up for this week: 

I want to get back on a Monday through Friday workout schedule so for week two of Beta I will be doing doubles Wednesday, Thursday, and of course Friday. I then will take Saturday and Sunday as "rest" days. Then pick up the following Monday with Week 3. I say "rest" because on Saturday the teen & I are running...

We are so excited and can't WAIT! Should be a blast. I will also stretch Saturday. Sunday, if I wake up on time I will go to Yoga at Lulu lemon, but we'll see...I'm not putting any real pressure on making that happen!

Focus T25...an honest account Day 5 and 6

Day 5

AB INTERVALS!!! Yup, this pretty much says it all....

25 Minutes of nothing but abs :-/ I do not have a strong core and I hate ab work. But, this was very doable. Thank goodness Shaun T, like me, hates crunches. I couldn't have done 25 minutes of crunches. I'd have hurt myself. Seriously. So, moving on to the meat of the workout:

Once you get through the bombardment of Shakeology commercials you will need a "beachbody mini mat", I used a regular old fashioned yoga mat. Most of the exercises don't have much modification I noticed. So, if you are pregnant you probably want to substitute this with another DVD. There was one exercise, the double leg hand to foot, that I did have to modify as my core was getting a bit tired by that point. I do love though that every few exercises there is a "cardio recovery" to complete. I really like this break and it does give you enough of a break that you can continue working hard without straining your core muscles. At the very end there is a 3.5 minute cool down.

This one you don't do a whole heck of a lot of sweating in, but your muscles do get worked super hard!

Day 6


Yup, it was already that day...Doubles Day.  I thought about breaking it up, but really wanted to be able to stretch and relax on the 7th day so I got up and just knocked out the 50 minutes back-to-back.

First, I did the Cardio DVD so that way I'd be nice and warm for the lower focus as I figured there would be a lot of squats-and there was. But, to talk a little more on the Cardio, something I didn't elaborate too much on during my first account of the cardio dvd is the burnout. At 15 minutes there is a burnout. It's a 2-3 minute non-stop workout of the previous 4-5 exercises you've just done. This happens again at 5 minutes. Then, the final 3 minutes are "power moves" where you work all the major muscle groups, but you keep going for all three minutes.

Last, I did the lower focus. I hadn't done this one yet. It was of course a 25 minute DVD and starts with a nice warm up, much like the one in the Cardio DVD. This is basically the equivalent of leg day. It works the lower abs, booty, thighs, calves, etc. There is a burnout at 13 minutes where, for the next 2-3 minutes you consecutively do the hardest version of all the previous exercises. Then, you move on to learning the next set of exercises. However, after the lunge progression at about 9 minutes or so I don't know what happens as 4 times my DVD kept skipping to the last minute. So, after much backing up and rewinding and restarting I gave up and just did the final minute and called it a day. I am going to try cleaning the DVD before sending it back, though. I will say, this workout is a fantastic lower body workout. It is full of balance exercises; focusing on calf toning, and lots and lots of squats!!! As for modifications, I'll be honest I was trying to keep up (I was tired and sore lol) so I didn't pay too much attention, but I know she didn't modify a whole, whole lot. A good majority of the time the modifier was doing exactly what the rest of the crew was doing.  The cool down is 3 minutes 10 seconds long. This cool down is more of what I am used to in way of hip flexor stretching, forward bend and stretching to the left and right to work those hamstrings. 

I really didn't mind the double day and enjoyed the sweat I worked up. Unfortunately I don't have a picture of what I looked like after as we were in a hurry to get out the door, but I was definitely a hot and sweaty mess and my mom razzed me about sweating all over her floor. LOL!!!
